Mountain food, handled with real skill. We take what the Alps are known for and strip out the heaviness, so a dish rooted in the valley arrives light, sharp and surprising. Local cheese aged nearby, river fish, forest and pasture produce, all rebuilt with technique rather than served the way the old refuges once did.

The valley draws climbers and travellers from everywhere, and the kitchen can follow them anywhere. One night it runs on Japanese precision, another on the spice roads of the Levant or the long-simmered comfort of a southern French Sunday. Name the direction and the chef sets off in it.

Pastry & the sweet finale

Pairing is its own expedition. Our sommelier studies the menu and charts a path through the glass, so every course meets a wine that raises it rather than sits beside it. The choices move with the food, growing bolder as the evening climbs, and nothing reaches your table by accident.

We can find bottles that rarely leave a private hand, verticals to taste side by side, large formats for a full chalet, wines chosen to mark the night rather than simply fill it. If you would rather keep it simple, that works too; the point is that the list bends to your evening, not the other way round.

Cooking classes

Cook beside the chef.

Some guests want to learn, not just be served. When a storm rolls in or your legs have had enough of the pistes, the chef stays on to teach, and your chalet kitchen becomes a workshop for the afternoon. You cook alongside a professional, hands in the produce, questions welcome, no rush.

By evening the lesson is on the table. What you prepared together becomes dinner, plated properly and poured with the right wine, so the day ends with a meal you had a hand in. It is part masterclass, part celebration, and it tends to be the story people tell when they get home.

A great dinner needs more than a great cook. Bring in a maître d'hôtel and a small brigade, and the evening shifts gear: your guests are met at the door, the pace between courses is judged to the second, glasses are topped before anyone reaches, and the kitchen is spotless without you ever seeing it happen. You host nothing and enjoy all of it.

Our floor staff come from grand hotels and serious dining rooms, and they carry that standard up the valley. They read a room, move quietly, and know when to disappear.
