Chef Pascal Barbot
Michelin-starred chef, Astrance, Paris 16th

Pascal Barbot.

Formerly three Michelin stars, one star today at Astrance: Pascal Barbot founded this Parisian house in 2000, now on rue de Longchamp. At a private table he brings pared-back cooking centred on the right produce, where plants dominate and Japan appears in touches.

One Michelin star today (Astrance); three stars from 2007 to 2018.

What is his background?

Pascal Barbot learned to cook in direct contact with produce, between the family vegetable garden and the farms of the Bourbonnais countryside. He then trained with Troisgros in Roanne and at L'Arpège with Alain Passard.

In 2000 he opened Astrance in Paris. The restaurant held three stars from 2007 to 2018 and keeps one star today. It is now on rue de Longchamp in the 16th arrondissement, at the former address of Joël Robuchon's Jamin.

Over the years, many young chefs now established in Paris have passed through his kitchen, making him a reference for a whole generation. His way of working, attentive to produce and seasons, has spread well beyond his own kitchen.

What is his cuisine?

Pascal Barbot's cooking is first a matter of produce: often wild, chosen with rare care, treated without artifice. He prefers restraint to demonstration. Plants take centre stage, French techniques serve flavour, and bridges to Japan and Asia bring freshness and contrast.

His approach is instinctive, starting from what the season offers at the time of the meal rather than from a fixed menu. For a private table, that means a dinner built around the market, highly legible, where each ingredient keeps its own voice and the plate says only what matters.

No sample menu is therefore shown here. With Prémices, Pascal Barbot's proposal is created for your date: the produce available that week, the number of courses you want, your guests' preferences and restrictions. You approve the written menu before the dinner, and the season decides the rest.

Where can he cook for you?

Pascal Barbot can cook in your home in Paris and Île-de-France, near Astrance: see our private chef in Paris. A mountain stay can be considered on request, depending on his schedule: private chef in the French Alps. For a reception in western Paris, the proximity of rue de Longchamp often makes a weekday evening easy to arrange.
