One Michelin star since 2019 (Frenchie).
What is his background?
Originally from Nantes, Grégory Marchand fell for cooking early and trained largely abroad. In London he joined Fifteen, Jamie Oliver's restaurant, where he was nicknamed "Frenchie". His path also took him to Hong Kong and to New York, at Gramercy Tavern.
In 2009 he returned to Paris and opened his first restaurant on rue du Nil in the 2nd arrondissement, under that English nickname. Frenchie received a Michelin star in 2019. Since then the chef has built a world of several venues and concepts around it under the same name. This journey explains his openness to the world's cuisines, always grounded in French foundations.
What is his cuisine?
His cooking starts from a French base and borrows from far away: Putumayo pepper, cassava, shiso leaf, picanha. It stays modern, frank and generous, with constant technical rigour and a priority on seasonal produce.
This freedom comes from his years in kitchens abroad, where he learned to marry culinary cultures without losing French precision. At home, that means a meal convivial in spirit and rigorous in execution, made to be shared around a large table.
The menu below gives a glimpse. Two bites open the dinner, one smoky, the other fresh and herbal; candied cassava follows with a peppery sauce and pickled girolles. Picanha, a cut of beef prized in South America, is served with grilled spring onions, and roasted figs close the meal with vanilla and hibiscus.
Figs and girolles place this menu at the end of summer: Grégory Marchand reinvents it with you each season, according to the number and tastes of your guests.
Where can he cook for you?
