Chef Baptiste Renouard
Michelin-starred chef, Ochre, Rueil-Malmaison

Baptiste Renouard.

Baptiste Renouard is the chef of Ochre in Rueil-Malmaison, holder of one Michelin star since 2021. At a private table he brings neoclassical French cooking in which plants, acidity and bitterness give each plate its structure.

One Michelin star since 2021 (Ochre).

What is his background?

Baptiste Renouard trained in great Parisian houses: Lasserre, Joël Robuchon and Yannick Alléno. Those years in the brigade gave him a solid classical foundation and a technical mastery he now puts at the service of a freer style.

The public discovered him in 2019, in the tenth season of Top Chef, when his ambition was already clear: to run his own restaurant. He opened Ochre in Rueil-Malmaison, just outside Paris, and the Michelin Guide awarded it a star in 2021, before he turned thirty.

What is his cuisine?

His cooking revisits the French repertoire by giving plants the leading role. Herbs and flowers gathered through the seasons bring freshness and depth, while acidity and bitterness run through often daring combinations: a well-seasoned, clean style, never heavy.

A versatile chef, he also draws inspiration from outside the kitchen, from nature, painting and music, and each dish reads like a short story. At a private dinner, this controlled tension keeps the plates lively right through to dessert, whether the evening has four courses or more.

The menu below illustrates that balance. Beetroot lifted with horseradish and sumac opens the meal on an acidic, earthy note; candied aubergine with lemon thyme then meets bluefin tuna and plum. Lobster ravioli with wild watercress and poultry stuffed with foie gras recall his classical training, before a more comforting dessert, the memory of a brioche hot chocolate.

These dishes appear in menus Baptiste Renouard has offered our clients; he recomposes them each season and for your guests.
