Prémices is more than a private chef at home, it is an expertise in gastronomy and conviviality!
At Prémices, I select each chef with almost obsessive attention. What matters to me is not only their resume or the stars they have been able to work with, but their sensitivity, generosity and above all their ability to create an experience. I am looking for personalities who have something to tell through their cuisine.
I start by meeting them for a long time. We talk about their background, their influences, what really drives them. Then, I taste their cuisine, of course, but I am also interested in their posture, in their ability to adapt to a home service, in understanding a place, an atmosphere, and the guests. I want them to be able to provide a rare moment, not just a meal.
It is an artisanal selection, almost intuitive, but always demanding. I never wanted to do volume, I prefer to focus on the exception. Each chef who joins Prémices becomes a voice of the project, a face of the house. And that's what makes the experience unique.
